I've set up a forum. At the moment if someone makes a post in a particular thread they will get a mail notification every time someone else makes a post in that thread. I was wondering is this how mosts forums are set up? Or is there any way to have it so that members get less notifications?
No. When your forum gets bigger the server will be sending emails out at literally every second, and it is an inconvenience to users. Instead, most forum software allow you to toggle this behaviour.

notifications via platform will suffice. if they're new fans and if your forum is of their liking they'll be back. those emails most often be seen in the spam folder so it's that effective. don't worry, we're on the same boat. I just started two new forums
The user should ideally get a few choices - an email for each post, a daily digest or a weekly digest.
Trying tyteen4a03's advice would certainly prove helpful for you in the long run - there is no denial to that however in the short run you may want to continue using emails or posts as trigger
