FFMpeg Wikipedia Entry - Explains it better than I ever could. FFMpeg-PHP is a PHP extension which adds FFMpeg functionality to PHP easily (horrible description, but hopefully it makes sense). They're typically used for a lot of those video / "tube" sites you see (converting, grabbing screenshots, watermarking, etc)
