E-commerce structure change - How long to see effects?

Our e-commerce site has around 8000 pages in Google's index. We've just implemented a new structure with much more SEO friendly URL's and reduced the side navigation bar which was previously overpowering all the pages with irrelevant keywords for any particular page.

We've 301 redirected all the old pages to their equivalent on the new structure. How long will it be before we see the effects of this or is it impossible to say?

A ballpark figure would be handy to stop my boss from panicking. :)

    2 months? 6 months?

On a side note - how long does it usually take for Google to update a cache of a page?

I'm not sure I understand the question. But here's an answer if you're talking about the new pages showing up in the SERPs where the old pages are now. If you've 301 redirected the old URLs to the new ones you should see the new pages being indexed in Google within a few weeks. It won't all happen at once, but as soon as google crawls a page it will show up with the new URL. If you've done it right you shouldn't see a decrease in your search engine positions.
