I want to start an Iphone/Ipod blog but I don't know if I should go for a totally unrelated name like itroob.com or something like iphones-ipod.com.

Itroob is a lot more brandable.

So how vital is the domain for SEO? ;).

From my personal experience, our team always tries to get domain names that are SEO friendly. I think you should consider a domain name that contains at least 1 or 2 keywords that you are willing to target and, if possible, no "-" in its name.

Something like IPHONESIPODS.US would be good (its available too)

    Good luck with your business!

It is always a plus to have your main keywords in the domain.

Do not focus your entire business concept around a domain name having your keywords in it. Go with the one that you like the sound and look of. There are plenty of other ways to optimize your website, yes the perfect keyword combo would be great but if it is not available to you then why bother with keywordkeyword2.US? A business with a .US extension?
