Does adsense have to approve my site before I paste their code into it?

I already have an adsense account, but I was certainly worried because I heard that adsense must approve my site before I paste code into it. Is this true?, I mean, I already have several sites running adsense, do I have to ask for their authorization each time I set up a new site?

No, you don't. You just have to make sure all the websites were you put your Adsense code are TOS compliant. :)

You should read the Adsense TOS and the Program Policies. ;)
