Depends on what the chicken has been fed. Eggs yolks can be a great source of omega 3 oils, selenium, and most vitamins and minerals that a human needs. Yay for eggs. Unless you're fat phobic like most of the planet who believe what they read in the papers.

I generally seperate the white from the yolk. Originally it was to simplify the making of chocolate mousse. But now the habit has become so ingrained that I do so for boiled eggs too. It's not easy because you need to bore little holes - one at eaither end of the egg - much as egg collectors do. Then you need to be very careful... Getting the white back into the egg is quite difficult but, once mastered, is a breese. Then you seal up with super glue and boil - voila, a boiled egg with no yolk! It's a great thing to do for visitors - they are amazed MCS x
