how could anyone not like indian food? curry is good with almost anything. im a big fan of coconut rice too.

Most Americans are carnivores, and love their beef, and are in general not very fond of lamb. Also, many Americans are still not used to spicy foods (and I'm not just talking about chili-pepper hot food). Most "average" American food is not very spicy, with a few notable exceptions: chili and barbecue being the most popular exceptions. Even with those intensely-flavored foods, if you're feeding a crowd, you need to be very careful to make the food a bit bland, and offer hot sauce on the side to be added to peoples' tastes. I, on the other hand, love spicy food, and am always disappointed by the buffets at Indian restaurants here in the US, because the food is so mild.
I've never tried Indian food, but I think I would like it. I enjoy eating vegetables, and spicy food...
