I don't know if you did find a course since the opening of this thread, but I read a few books (mainly french) and followed a few courses I found online (also french), but in the end, the biggest lesson I learned is to practice. Write copy texts like you would like to read it yourself. If there's a demand, there should be supply. If there's a need, there should be something to fill that need. Create yourself a few persona and write different texts according to them. This is important, because each persona/profile react differently to your words. Some of them are just looking for information, others hesitate to buy and you've got some who already have their credit card in one hand. How are you going to speak to each one of them is the key to copywriting.
