Did you know ad text was part of your quality score and every time you make changes (no matter how minor) it resets your ad text CTR back to 0%?
This does not hold true just for ad text, it also is true when you change destination URL's.

I am sure some of you knew that, but how many of you knew every time you reset your ad text it lowers your QS and you will in turn pay more in the auction?

Of course. You create a new ad, there is no history, no impressions, so your stats start from zero.

Your QS is also recalculated and basically is the average for that keyword for all advertisers. Your QS can quickly change - up or down - depending on the success of that ad once it gets impressions. You should always be testing new ads. A temporary lowering of QS is nothing to worry about. Give it 40-50 impressions.
