Deleting/Managing huge log files

I'm new to Apache and managing a virtual dedicated server. Multiple times I've had a server fill up with GB's of log files taking the entire thing down for going over the quote. (I'm talking 49GB+ of log files)

I was able to set up a log rotation option via Plesk that has a maximum of 2 log files, compresses them, and does so weekly. But I'm told this alone won't solve the problem, that I need to log in via SSH and delete these log files every so often.

So I was wondering if anyone had any tutorials or links to some on how to manage these log files better. Or even where to check for these huge log files. Should I do so daily? Weekly? Monthly? Does the log rotation not delete this log files after it compresses them? Is there one general command to delete all the log files? Commands I would need to use?

Just some general help and options on dealing with this problem would be so helpful!

    Thanks
