How to tell google that you are no longer using a sitemap,so STOP looking for that sitemap and the url's in it
just delete the sitemap from googles site, for URL's you can use robots.txt to stop crawling specified URL's
did that months ago, still looking for them, there were thousands of urls robots.txt is not possible. its looking for non-existing urls and returning with 404's
I had that happen a few times myself. The best thing to do is recreate the sitemap and then click the resubmit sitemap on your account. Plus make sure that there are no links pointing to the pages that no longer exist.
If you need updated sitemaps, AutoMapIt crawls your site regularly and updates your maps for you... this is exactly why I created it in the first place. I didn't have time to keep running software and I always forgot to make updates
Creating a sitemap is not a problem.removing from google's cache is. i had to setup a 410 error for sitemaps.

they have different servers so it takes some time for the results to get right. But it will, just resubmit a new one. It should work.
