There is a URL which has updated meta content which I have been trying to index for 2 weeks now. But the last crawl date as per URL inspection tool is unchanged since 2 weeks in spite of multiple requests. Is there any reason why this could be happening?
There can be Multiple reasons. What is ratio of update of your website? If your website is update on regular basis then search engine bots more frequently than other websites. Means you are not updating your websites on regular basis. How informative contents there? It can be also a factor that what is your contents quality score ..... if you are updating on regular basis but contents quality is not good then also bots ignore website for long time. Where you are submitting your links If you are creating any new page then search engines dont know about it ... either submit sitemap to google webmasters tools or ping search engines for your update .... or bookmark your link to top sites like reddit, digg etc ... because bots visit there more frequently and if they find your URL there then more chance that page will crawled soon. So you can think now what reason can be. If you will share URL of site then we can explore more better.
