I am getting into business with someone where we are going to do email campaigns (About 1 million per day) and would like to know how much of a difference (if all we are using it for is emails), is the speed of the processor?

It ranges from $100/mo to $310/mo from what I have seen and would like to keep expenses down. So from a
    Celeron to a P4 2.8Ghz HT to a Dual Core 930 to a Xeon 2.4GHZ Dual Core

How will the performance and speed really be affected???

I'd recommend a xeon HT 2.4+ GHZ for mail server purposes

Dont even consider a Celeron here. As what the previous poster says, Xeon HT. Also consider AMD Opteron. Make sure you pick a high end spec server in your scenario..

Yikes - that's a big volume of mail - go with the higher end CPU. You might need a lot more ram as well - I'd say at least 2 gigs.
