if I bid on the keyword "green apples", will my add show up when a user searches for "green"?

That probably won't show up, but broad match has matched some very odd (& completely unrelated) keywords for me before. I concentrate the majority of my effort on phrase/exact match keywords, and I monitor my broad-matches closely by using a Search Query Report (so I can negative-match bad keyword matches & phrase/exact match top phrases for easier reporting).

    No, it won't.

It will show up, for example, for "buy green apples" or "american green apples"

I've had the same experience as tvmatt - I find broad match unusable -
for 'green apples' on broad match expect to find your ad showing for 'blue asparagus'

that is true, with broad match you have to monitor the exact search for phrases using search query and additional transparency tracking to monitor it closely. Google will map you to anything they find relevant to green apple. You may end up getting mapped to red apples as well.
