Completely changing website (layout, URLs). Suggestions?

    I launched my site in 2004 and since then it has become quite popular, specially with the help from Google and other SEs.

    Now the time has come and I want to give it a complete overhaul, which includes the layout and URLs. Currently they're something like this:

    Foo-Bar/Foo/Bar

    I'd like to simplify it with something like this:

    foo/bar

    My question is: considering that search engines send me several thousand hits a day, should I even risk changing the URLs for something that makes more sense to users?

    I know about 301 redirects, and that's what I intend to do to redirect all old URLs to the new ones. But is that enough? Will my rank and PR stay the same?

    I'd love to hear from anyone who has done this before.
