I want to create a chat room on my website and was just wondering if anyone could recommend any software for it?

I strongly suggest you look at Flash based chat applications. They're not as rough on the server as PHP/MySQL and Ajax based chat apps are.

 

I can recommend a few, I need to know your budget though so I know what exactly I am working with.
