they probably dont edit the adsense code. instead they would just use some sort of random script which would choose randomly from a selection of adsense codes which would all have different looks
You do it when you set up your ad through adsense control panel Colour palettes * Select a color palette for your ads. Hold down the Control or Command key to select multiple palettes that will rotate randomly on your web page
