I have one site that has been getting more and more Google hits lately, some of them decent keywords with decent rankings. This is a first for me. Problem is every time I go to check on the same search I am never listed there. I don't think one time I have shown up.

At first it was a lot of foreign language searches, but more recently I have seen several english searches show up as well.. Is this normal behavior? Is it indicitive of anything?

Same with me, I get 100+ hits from g for a variety of phrases, yet I can't find my site listed in the top 100 for 90% of them, not that I'm complaining.

I see it a lot - 9 times out of 10 it's due to datacenter flux. i.e. for a brief period of time you are ranking very well on certain DC's but not on others.

The same thing happens to some of my sites. I believe that different datacenters have different rankings. If you follow that search from your site stats sometimes you won't see your link listed anywhere. I think that happens because Google will give you results based on your ip.

This is not hard evidence, just a theory based on my own experience.

Have you tried typing "site:example.com" into google? It'll show you what it has got in its database for your site.
