Can we show our total AdSense earnings without showing the number of clicks and impressions? Is it against the rules?

you can also show the impression. only showing CPC is forbidden by the tos of adsense. otherwise it is fine.

If you read adsense's tos they say only gross payments. Which means everytime they pay you, so per month. But you see a lot of screenshots with daily amounts and the rest blurred. I mean from the monthly payment we can workout and average daily earning, so I guess the actual daily earnings don't matter. But even showing your amount of ad impressions along with the earnings gives out the eCPM, only missing the CPC and CTR.
