I have a site that shows up the wrong ads for my content, because the title of my site has the word "gold" in it google adsense shows ads for gold jewelry when my site has nothing to do with jewelry. So can I ask them to remove the word "gold" from my ads?

Contact to google or filter all the irrelevant ads or remove "gold" keyword.
or change your site target become jewelry content that can earn well:D

even after adding/removing keywords you need to wait for adsense bot to scan your site.that could be a few days.

does the page title have the word "gold" in it?

you don't have to remove the bad keyword from the page content, just use section targeting to tell google that you don't want ads for that keyword.

yes, google sucks these days when it comes to targeting.

    You can use adsene targeting.

    https://www.google.com/adsense/support/bin/answer.py?answer=23168

Section targeting allows you to suggest sections of your text and HTML content that you'd like us to emphasize or downplay when matching ads to your site's content. By providing us with your suggestions, you can assist us in improving your ad targeting. We recommend that only those familiar with HTML attempt to implement section targeting.

if nothing else works, make sure that none of your meta text has the bad keywords in it... see if that helps.

section targeting could take awhile before it kicks in, so give it a few days.
