You can't choose Adsense ads - you can only design their look, so to say.

However, you can always block certain type of ads from showing up in your websites. For example if you want to prevent ads from hotels or travel companies, you can block them (go to your 'Allow or Block Ads' section of your Adsense account and enter the URLs, adsense will automatically prevent them from showing in your sites - but remember never, ever left-click the ads on your site's page itself).

Another option is to block certain types of ad categories (also in 'Allow or Block ads' section in adsense account). I hope that would be of help to you.

You may also refer to other blocking How-tos by just typing search in Google search 'how to block unwanted or irrelevant ads'. You'll find literally thousands of answers to your problem :)

I hope that helps. All the best to you

No you can not. It's a contextual advertisement system that reads your content and places ads based on that. Irrelevant ads always pay less. You can influence it by writing on hosting related keywords.
