Can anyone with SEO expertise help? Have I done something wrong? (SERPS dropped..BAD)

we were on top for 1 year but now on 16 and 19 with 1 keyword
how can i improve rnking

The best advice I would give is read the Google webmasters blog and help files. You should be on the first page if you do things right. I have obtained PR#1 in Google search for some sites that are a week old. No BS. I currently have about 40 domains developed.
Be sure to add analytics to your web sites.

The listing that was on page 3, wasn't even in the first 18 pages yesterday, but it's now back to page 5.

It seems as though it was either down to the "Dance" or the h1 tags that I have changed back.

I think it is just normal. You haven't done anything wrong. And onething you shall bear in mind is that you are not the only one that is ranking for the keywords. You need to do more seo work an increase your target traffic. You can try article submission. It is helpful for me.
