what do you think is the best, most fool-proof, and fastest way to see the bounces and click-throughs on an affilate landing page?

Analytics software. Just install Google Analytics, that alone has decent bounce rate tracking.

But it doesn't show you if they clicked through the affiliate link to the merchant site, does it?

Hi there! My advice is to use software that supports log file tracking ,so you don't have to deal with tagging. Logaholic Web Analytics is better than Google Analytics because it allows you to control your data and do live tracking. Furthermore, this software is easier to use and less complex than GA. You can get a free trial for Logaholic at: http://www.logaholic.com/wp/trial-download/
