I am going to start a shopping site. Which one is the best payment processor. I am from India, so it should accept both Rs. & in dollars. It must accept all types of credit cards and should provide some sort of protection to my sales.

I think not a single payment processor can accept the INR currency.
    Best Luck...

I use Paypal in my site nestsites.com and it works very well with multiple currencies. It was easy to integrate too. There are many other payment processors you can check out as well. I haven't tried any of them yet because I haven't had any problems with paypal so far. Good luck

PayPal is still the standard. More people online also have PayPal accounts so you get a broader market.

For INR, you might go with ICICIbank payseal. Citibank India also has a service, but they are costlier.

I think you should give one more option to your buyers including paypal those who wish to pay through credit card.
