    I am changing the structure of my website.

    Currently my site looks like

    www.xyz.com/myproduct.php

    Code (markup):
    This page for example ranks well on google.

    I am changing things around and doing subdomains.

    I am going to 301 redirect

    www.xyz.com ==> orange.ca.xyz.com/service/myproduct

    Code (markup):
    Should this have a major impact on my rankings since the page is now on the subdomain?

    Any rank from www.domain.tld will be transferred to subdomain.domain.tld under a 301 redirect (at least for Google.) Search engines will see these as the same page and treat the destination as canonical. Do bear in mind though that any backlinks will still point to www.domain.tld, so if you remove the 301 redirect at a later date, then those links will no longer point to the correct page.
