Apache Custom Log files

    I have CENT OS on a dedicated web server and around 3000 domain names.

    1. Where the hech in the world is the custom log line/file located? I know i changed it once...

    2. Is there a way I could track exactly what people write on their web browser? GET /page is not giving me to much information if i am having around 3000 domains hosted. Also i can't write an log to ever home/website ... i am runing stats software, and apache also said this can lead to security problems because apache is write the UID of root in the log files,etc.
