I'm convinced that as broadband becomes more proliferated and speeds increase that video info products are going to become more popular. I doubt they'll ever replace pdfs because pdf will always be affordable. But video streaming, downloads or DVD delivery with a fulfillment service will be a great upsell or simple a big ticket affiliate product. So has anyone here yet dabbled in it? I hear it is as easy as organising a free seminar and videotaping it. Anyone done anything like this?

Yep, I've done it on a few CB products (www.letsdancelouis.com - www.getreadytopass.com & a few others). There's no difference other than some additional customer support even if you offer multiple file extensions etc. Also did real DVD fulfillment for a few projects (including the dance one on a separate domain going through CPA's), however the overhead with that is obviously bigger, as are the chargebacks, region problems, etc. Video products aren't as popular just yet (as pdf's), however you make a valid point with the broadband issue, every year it gets better, so yes I think video/rich media/live stream ventures will still grow quite a bit in the years to come. Russel Bronson is big on creating educational video products. When he goes on tv show he talks about how he made a educational video on how to make a potato gun. he claims he is making about $2,000 per month.
Video products won't replace PDF files but they are great ways to add real value to your offer. People can SEE that a lot more effort goes into creating a video over a PDF, which makes it a much more appealing product to buy. I just created a hot product in a big market... but did something that no-one else in the market has done. I created a VIDEO, which increased the perceived value and offer. I could put a larger price on it and give more to affiliates... However, all the laws of marketing still apply with video. You can't just create crap and expect it to sell like hot cakes. You've got to really add the value and create a compelling offer as to why your product is worth $97 or whatever.
