I've found that if you tell people that you only use XYZ which is free they'll use it too. I'm lucky enough to be a politically stable country so signal isn't used by anyone I know. I can walk down the road to the corner shop, buy a $5 sim card and be up and running in minutes and nobody knows who that sim card belongs to. The authorities can track my movements and monitor my comms if they want to. Let's say I was a bad guy but the authorities don't know my phone number. By staking out my home they'd very quickly be able to tell which cell phones were pinging towers when I was home and isolate my number. If I use mobile data I'm guessing they'd be able to very quickly identify my network. From there could put a warrant out to collect all comms made by the phone. So your app that doesn't request a phone number is only adding one or two steps to a surveillance program.
