PR will not change unless you have had link exchanges and you remove links to other webmaster sites... Content will most likely change your SERPS

OF COURSE they will change your rankings. WHY WOULDN'T THEY? First you have a site about mortgages and then you change it to insurance and you expect it to still rank for the same mortgage terms? Or do you think that since you had #1 on "mortgages" you now own #1 on "insurance" as well? Gee, if this is the pinnacle of education in the USA when it comes to logical thinking I really don't want to live there after all.
Without knowing what your content is now and what it will become it's an impossible question to answer. If the content contains the same keywords, but is better optimised for those keywords, you might do better. If it's for different or new keywords you'll no doubt do worse without a combined link-building strategy.
A question only requires one question mark after it. Put three, and it doesn't make the question look more serious, it just gives the impression that you can't afford a keyboard that doesn't stick.
Sure will change . If u have good PR and traffic dont do full changing do only little or add more content

Your SERPs will change. PR won't change because of that as PR doesn't have anything to do with content.
Changes in SERPs will be sure if you are going to change the whole content of your site. I suggest having all of your targeted keywords in your content related with web pages.
It will change all of these cos Google will think it is a new website effectively. It will also take a while to revisit and reindex your site.
