One thing I have never done is convert text on my own website(s) to links that are valid on the same website. For example, if I have the term “hot dogs†in an article and I have a hot dog category…. I plan to do it ASAP, but my question is, will it help with the SEO side of things? Will that link be taken into account in google rankings?
yes i think it was good before google's new algo but after implementing new algo what i have noticed is to minimize the internal linking .. i got some mails from webmaster forum, sites that keep your internal link minimum .... and let see what other webmaster suggest you here .. even i am waiting for some good responses ..
yes. we call it internal links. Google will think that your page is important if the other pages are link to it. that is the concept! hope it helps

Well, internal linking is considered to be a good method in seo, since if any of you user is looking for the term "hot dog" and if you have a page which is naturally linking to this page, then there are chances that Google will display this page in the results so as to better serve the user with the information what he is looking for.
Internal linking is very good to do, but just make sure not to overdo it. It is a natural thing that certain pages of a site would be relevant to each other, and all the internal link is doing is pointing the reader to some more (hopefully) relevant content, which is what G wants to do in the first place.
