I am trying to target "anykeyword shop" but not "shop anykeyword" with adwords. Using "shop" wouldn't work, is there any wild card for this type of thing ?

It's sounds like it would be best to use the exact matching option for all the anykeyword shop keywords you are targeting. The phrase match option will display your ad's for both "anykeyword shop" and "shop anykeyword".

Good advice kevingibbons, I would use exact match in that situation as well. Broad or phrase won't accomplish what you're after and there's no wildcard you could use either.
