How do the more experienced adwords people here feel about using a wordpress install as landing site, concerning quality score/relevancy? I mean I know it's easy to insert keywords and stuff, but how about the landing link? Is it wise to keep the date of the post outside of the link, and is it good to keep the post date on the post itself? Looking for any suggestions on this.

real landing pages are best... hand crafted there are millions of examples, just search for something that comes to mind and then start evaluating landing pages make note of which ones stand out, which ones capture your interest. making some generic boring and lame wordpress landing page is not going to be good on conversions. You need to capture your visitors interested, not bore them to exit your page
