First off, read the Search Engine Optimization FAQ by SitePoint. It'll take you step by step on what to do. It also provides references for further reading - one of which I recommend highly: Chris Beasley's SEO Guide. You may also be interested in my "All You Need to Know About SEO" thread (link is in my signature) here on the forums as well, though it's not what I'd call "required reading" after reading the first two. Read those, and you won't have a need for anything else other than the occasional Google Video of Matt Cutts and industry blogs to keep you up to date on what changes in the industry (and despite what many people here will tell you, it doesn't change all that much very often - only the underhanded tips and tricks will change, so stick to the fundamentals and you'll do fine).
