I want to redirect my .html files of my old site which gets SE traffic to my new site so I don't lose visitors. What should I use?

I don't think you can 301 file extensions to others with just one line. You probably have to 301 each and every url you want redirected. You might be best just doing the pages that bring you the most traffic, and let the se's pick up on the rest by themselves. Get a good 404 page for that though :D

I would keep them .html and add a directive in the .htaccess to parse them through PHP.

You can create a normal HTML page then save as 404.shtml - try that...
