I have a site which I am going to redesign and restructure but most of the pages are in supplementals, should I even bother redirecting all those pages in supplementals to the new pages?

If i did redirect it, would it cause the new pages to go into supplemental because the old ones are currently supplemental?

if you redirect your old supp. pages to new pages , your new pages may be supp. pages or not be supp. pages. that depents on your new pages optimizing

well supps aren't necesarily bad... depends how they ended up in the SI... and it depends if there are BLs to them (likely not if they are in the SI)
