    Are one page content websites acceptable? Or would this go under 'websites just made for adsense' category?

    Yeah, you wouldn't want a one-pager anyway as it wouldnt do vert well. Atleast have the following pages;

    -Main Page
    -About Us Page
    -Contact Us Page
    -Site Map Page
    -Privacy Policy
    -XML Site map

    These would be the bare minimum you would want IMHO.
