    I've been looking and beyond substituting i,e, etc with y, your not going to find many english sounding names with no vowels. If you can use foreign sounding names (idk the rules of the challenge) then I would recommend looking up Thai names for those born on Mondays. Old Thai culture says vowels are bad luck if your born on Monday, so this will be your best bet I guess.

    good luck finding a name with no vowels in it.

    and the letter "y" is a vowel for you illiterates. :)
