Include both, one contains pages and one contains posts

That's not hugely practical though, is it?

If you have a small site, you can do that, because maximum size of sitemap.xml is 10 MB.

It's not the size of the file, it's that every single time you make a post or an edit on your site you have to repeat the process.

if size of sitemap.xml more than 10 MB it automatically divided into several files (sorry for my english, it is not my native language)

    Hi
I am also using the Yoast plugin for my website , and it generates sitemap with name sitemap_index.xml which is hosted on different server and contains every taxonomy which you don't hide.
    ex 1. site/post-sitemap.xml
    2. site/page-sitemap.xml.
above two you gave will always remain apart from it you will set tag-sitemap.xml and category-sitemap.xml .

And as far as why two sitemaps , you will see one sitemap named sitemap_index which will contain many sitemap itself. You will need to submit only main sitemap(sitemap_index) to webmaster tool of your choice, their bot will crawl your inner sitemaps.

And about the location of your sitemap .

You will never see the sitemap_index as you said you are using yoast , they host sitemap on different server. However if you want to see the sitemap , then generate the sitemap with xml-sitemap dot com site and place that sitemap in your root directory and submit this generated sitemap to google bot or bing or anyother webmaster of your choice .

Let me know if you need any further clarification
