    For the 'About' and 'Contact' pages do I use just the following keywords:

    About page - Keyword: About
    Contact page - Keyword: Contact

    or

    About page - Keyword: About, Mount Everest,
    Contact page - Keyword: Contact, Mount Everest

    Which would you choose?

    I'd choose the second set, but I'd change it to "About Us, Mount Everest" and "Contact Us, Mount Everest".

    as regularly admin use in their website, I would consider the first one,.. and add your website at the bottom line.. ;)
