Hi Joseph, I would love to help but speaking as an Italian (and a pizza lover) I have to ask you what a "pizza sauce" is...
Well, if you mean a sauce to put on a pizza I would say a good tomato sauce, lightly seasoned. Let other solid ingredients do the rest. If you mean a gravy-like sauce you can use with other meals, I would say it simply does not exist (and no need to invent one). Pizza is not a flavor (and there are so many kinds). If you fancy pizza flavor I suggest just to find and eat a good pizza!
All right, this makes me happy. I first prepare a special dough based on Neapolitan Pizza disciplinary (meaning very small quantity of yeast and very long time of maturation). I like to prepare my pizza in several ways. My favorite is a classic, Pizza Margherita: make a circular painting on the dough with a good tomato sauce previously slightly seasoned with a pinch of salt, a drop of extra virgin olive oil and a hint of sugar (this depends on your tomato sauce acidity). When half-cooked put on some buffalo (!) mozzarella (make it dry in the fridge for one day or you'll end with a milky lake in your plate). Finally put some fresh basil leaves just a second before going at the table. Simple and extraordinary. Other combinations I like are (consider always the tomato sauce as base): garlic + origano + anchovy, canned tuna + onions, onions + pepperoni + chili pepper. In general I would quote "less (and good) is more". Enjoy!
Ahhhhhhh.....pizza. I wish I can eat it. Carbs are my enemy. I wish the pizza joints here had alternatives like whole wheat. Geee....now I'm hungry for pizza. Welcome to DP, I myself am trying to get back into this forum. Buddy
