You cannot change the quotes, instead try to write something about the quotes and make a good quality post. Ignore posting only the quotes which can seriously flag your site for duplicate content.
Write a 100% unique intro paragraph before the quotes, and another one summarizing everything at the end. You could also write a few unique sentences about each quote... your thoughts on it, how it has helped you, how it could help others, etc... That way the quotes are only a small amount of the actual content in the post and therefore it will contain hardly any duplicate content.

As you are talking about title, then this is not a problem.. it won't be considered as duplicate content. If it were in body and you are using the same sentence in your body which can be found on other sites too, then it may be duplicate..
I agree with trent.. then you mix them up a little bit like put a story in it why you like that specific quote...
Just write a 250-500 word introduction and you will be fine. Google is not stupid and quotes don't change, just like lyrics don't change. Yet, when you search for a songs lyrics you will see dozens of pages with the same exact lyrics, as that's what people want to see. Talk about the quotes as much as possible, but I really wouldn't worry about duplicate content when it comes to posting a list of quotes. Don't copy the exact same list that someone else posted!!
The key to doing anything online is quality and self-produced. there have been some good suggestions so far. But you have to remember, there's no concept left that has not been explored a thousand fold. The trick is to make it your own. Put your own spin on it, relate it to something else, etc. If you do this, you'll never be in trouble when it comes to duplication.
