the answer is years of technical and real life experiance.

each "boundary" or edge is different, there is no one solution.

photoshop provides 4 ways to smooth font edges alone, depending on what your requirements are.

lasso tool you can apply automatic feather 1px. 2 px or more it may help you "smooth" the edges. it wont make it finer, all depends on what resolution your working at.

for best results work on oversized image and then reduce down to your desired size.

There are many ways to “smooth” images in Photoshop. Blur filters can be used to soften an area of a photograph or an entire image, as well as for smoothing transitions. You can also add noise, apply filters to individual layers, parts of layers, or entire images.
    Difficulty: Moderately Easy
    Instructions

    1. Select an area of an image that you want to smooth or soften using a selection tool, like the Magic Wand. Make sure you have the correct layer selected in the Layers Palate before making your selection.

2.To select an entire layer, click on it in the Layers Palate with your mouse. You can choose to view only selected layers by un-clicking the eye to the left of each layer within the Layer Palate, except the one you want to view.

    3. If you wish to apply a filter to an entire image with multiple layers, you will have to “flatten” the image to do so. Go to the Layer Menu at the top of your workspace, and then select “Flatten Image.”

4.Go to the Filters Menu, then Blur and choose a filter. Each filter has varying levels of control. It is important to familiarize yourself with each of these and their abilities by playing around a bit with them.

    5. Adding noise is a quick and easy way to smooth by blurring. Go to the Filters Menu, then Blur and Add Noise. Choose the Amount (percentage) of blur, the distribution (Uniform or Gaussian).

6.You can add effects to layers from within the Layers Palate as well. Some layers are better than others for their effectiveness in blurring or smoothing.

This is like another post I made about selecting your background more easily, but I think it also applies:

You can use the "extract" feature:
    1. Open the extract tool: Image>Extract or Option/Alt+Cmd/Ctrl+X
    2. Take the marker tool and trace around the image you want to extract. Keep the marker 1/2 way on the image and 1/2 on the background. For solid areas use a small brush, for softer areas like the loose hair, use a larger brush. Tip: to adjust the brush size use the [ and ] keys.
    3. Now take the bucket tool and fill the area you want to keep.Click OK.
    4. There will be a few areas that have been accidentally deleted. You can clean up the image using the eraser and the history brush.
    5. In the history pallette, click next to the image before the extract state. Select the history brush.
    6. Select a small brush size and "paint" back the image. Now you can place the image onto any background you wish.
    7. Thank the people at Photoshop Cafe for this tutorial!

My favorite way of smoothing the edges of an image is to trace it out very nit-pickily and with great detail using the pen tool. Do it along the very edges, but about 1px inside what you're tracing. Then convert your path to a selection, press Ctrl+i to invert the selection, and press the delete key. That should clean up the edges quite nicely.

I can't believe no one's mentioned this, but you should be using the Wand tool to create the cleanest of edges. It's quite a bit more complex than simply using a color selection but it's well worth the extra time and effort.

There is good way to make edges a bit smoother.

use an eraser with hardness 0 and clear off the edges slowly (increase and decrease the brush size as needed using shortcut key [ and ] on the keyboard)
