is it possible to make it so that you can see when someone dl's a document on your website vs when someone just views the document? i hope that made sense... something like, "doc A viewed 21 times" and "doc A downloaded 10 times." if so, what would be a good way to go about this? i'm hoping someone can point me in the right direction

Google analytics can do this is you create 2 separate landing pages and direct downloaders to one and viewers to another.

Yip, definitely check it out! It is very powerful and free!...You can do much more than just check visitor numbers, you can get full demographics, monitor adwords and a whole lot more. There are also tonnes of good tutorials and guides online.
