I think you would be in a better position to do SEO consultation for hotels rather than work in a hotel doing SEO as I would imagine that be an incredibly overpaid position which I'm sure not a lot of people really see too much value in. Unless of course its for the big heavy hitters. In that case I would advise you to find all the places you want to work, and send their HR departments your resume with an impressive cover letter offering what you can do. That way they will see the value and hopefully give you a position. As they say, sometimes you don't know positions exist until you tell them what kind of value you would add to their outfit.
I prefer you to construct a detailed resume in which mention your SEO achievements which you done in entire career! mentioning few list of keywords! that can make good impressions before applying for any prior vacany in any part of the world where SEO standards are understandable!
Conquer Google / Bing / Yahoo etc for the related 3 star and 5 star Hotel search terms that are relative in your own right and they will come flocking to you if that is the niche you wish to focus on.
i think you should search for hotels on google and mail your well crafted resume to all of them. dont forget to mention your past achievements.
I think you should start a website about your services. and first do SEO in your site. then when people search for hotel SEO or something equal, they will come to your site. they will also happy about your site position in search engines.. in the meanwhile, you can do email contacts and other contacting with Hotels . good luck
