I guess you can check their behavior through their backlinks. What approach they take? Do they have paid listings, ads, press releases etc? Paid advertising has a greater chance to rank coz your site will be put in a high pr page, a dofollow and some other factors that make them higher than you.
You can set up google alerts about your competitors and see where they are getting new links and blog posts from. You can also use tools like seo spyglass to keep track of competitors' backlinks, pagerank, indexed pages, and basically any parameter you can think of.
You have to just search your competitors' site in google you can found thier submission in which place they did submission and how thats submission, you can see that thing from this Another thng is that you have to view thier site coding how they put meta tags, Alt tags, Footer and all that things which is related
