I would suggest to go with some niche like "cat lovers dating" or "dating for people with blue eyes"... Whatever you may think of. There are lots of them out there. Or you could even create your own. Just make sure there is a market for that niche.
The other idea is to go local. Create a dating website for some area you live in or any other.

Both ways will help you to concentrate your efforts and get more targeted visitors. Plus the compettition is not so heavy. Local dating makes offline advertising much more easier.
If you go with something general you won't be able to compete unless spending thousands on marketing and promotion, etc

but instead of a dating site why dont you promote an existing one as an affiliate and see how many members you get to that site, train your self well and if you think you are very good, start your own site.

I've always wondered how to get members join from the very start. aka when you have a blank canvas who would join a site with no one on it!. I guess fake profiles and such would be needed to hook the original members before it would grow
