I think that it's not important in Directory Submission what category is better to choose.
Shure if you submission your site in your's category it will be better :)

Something related to any of these would be good

    Recreation: Outdoors: Fishing: Fly Fishing
Recreation: Outdoors: Fishing: Guides and Charters
Shopping: Recreation: Outdoors: Fishing: Fly Fishing
Business: Consumer Goods and Services: Sporting Goods: Fishing: Fly Fishing

Submit to irrelevant category and your submission will be rejected. How is this not important?

I try to vary where I submit to maximize my SEO efforts but always to a category that is relevant.

If your site has information on how to tie flies, you might also try categories about hobbies.

Or if you are a nice webmaster like me, you will edit it and move it to the right category!

So we should submit to random categories and you will personally ask the other webmasters to move the submissions to the right category explaining them the benefits of wasting even more time during the link approval process?

No, you should try to submit to what you see as the correct category. However as part of the review process the directory owner will list the submission in the category he or she decides is the correct one.

The editor's time will not be wasted as they will be improving their site. If it's a pay-for-review directory the editor's time will not be wasted as it's been paid for.

If you never understand, then just goto dmoz and google dir. and search for your niche, you will find appropriate category by looking other sites listed in whatever category. :)

If you know what you´re doing you would view the meta tags for the category you submit to and make sure they are of a similar / related theme to the tags in your title...

As for directory owners moving listings or editing them... That depends on two factors:

    a) Does the dir owner care about the content of his directory
    and
    b) Is the submitted site worth the effort

If someone submits a site incorectly but I like the site / its a useful resource and I can see the guys has made an effort then I will as well. Otherwise.... "Adios"

Try to search for Fishing related sites by searching each directory and you should be able to see what categories are related to your site. This is what I do before submitting a site and most of the time it works.

Instead of searching each dir. or many dirs. why not to search in top ones, i mean yahoo dir, dmoz dir and google dir.?? :)
