A good book, hardcover, well-published and smart-looking, something that's a joy to look at and to read (especially if she's also a student). Otherwise stockings are always a good way of just saying "I want to sleep with you".
find out what she likes, if she has a passion for something, find a way to involve yourself in that. sometimes the best thing to give costs nothing at all.
It depends on her taste and what she is into. It would make no sense to buy her a piece of jewelry if she wears none. There is no one fit method when it comes to women. One thing you are always safe with is a nice shirt in her favorite color. Of course, be sure you know her size or the size she wears. Too big and she is offended and too small makes her feel fat.
A letter. Something sweet and romantic. Tell her how you feel about her and why you like her so much. That part is free. A rose or 2 delivered to where she works would be nice to go with it.

That's not a bad suggestion. The point is, put some thought into the gift. Concrete suggestions without knowing her are more likely to be mundane than spectacular. If she likes to write, maybe buy her a nice journal. Buy a book that she loves, or by an author she loves. These are just examples, not actual suggestions (unless they fit). Think about what she likes or loves, and get her something thoughtfull to go with it. Might be something as silly as a no-spill beer mug.
