Usually, these positions have you write up a report on the site to be optimized. However, if you "really" do know SEO beyond any normal interview questions you should be able to answere their SEO questions on the spot without "prepping".
The seo glossary is helpful if you want to prepare for the seo interview. If you read all and remember it means you will be able to reply 70% questions.
