    Its hard to suggest something without knowing what your mom is like - what are her favorite things to do? Maybe she would like a spa day? You could make up a "coupon book", i.e., this coupon is good for a dinner out, this coupon is good for a free house cleaning - just remember if you do this you have to follow through.
